Japrak / Sarma

One of famous traditional Bosnian dishes is japrak (dolma in Turkish). Japrak (dolmas) are cooked in all Balkan countries, Middle East and Central Asia. It’s minced meat and rice with spices wrapped in chard, spinach or wine leaves. There is also well know variation of this dish called Sarma and it’s basically the same thing except pickled cabbage leaves are used for wrapping. 

Dolma is a family of stuffed vegetable dishes common in the Mediterranean cuisine and the word dolma is of Turkish origin from the word dolmak (to fill).

Sogan Dolma

This would be our recommendation to try since it has it all! Caramelized, oven-roasted onions gives a bit of sweetness to this meal and in a combination with minced meat, rice and different spices usually served with sour cream – it’s a whole package of different tastes served in a interesting looking food! Stuffed paprika is our well known oven-roasted meal. Paprika is stuffed with mince meat, rice and different spices inside. There is also vegetarian version of this meal where paprika is filled with grinded potatoes, onions, peppers and salt.

Burek - Pita

If you ask for Burek in Croatia or Serbia you would be asked back – Burek with what? cheese, meat, spinach or…? But in Bosnia Burek is only pita (pie) with meat. Any other pie is named based on the filling which is inside of the phyllo. Krompirusa (Potato pie), sirnica (Cheese pie), zeljanica (Spinach pie), tikvenica (Pumpkin pie) and so on…Pita is baked filled pastries made of a thin flaky dough known as phyllo (or yufka) – of Turkish origins. Even though it can be found in the cuisines of the Balkans, Levant, Mediterranean, and other countries in Eastern Europe, we are so proud to be internationally known as Mecca for Burek.
